Professor Pollans` course in Food Systems Law identifies the human health costs of food production, including those related to food consumption, food production and work in the food system.

It assesses a number of legal instruments that aim, with varying degrees of success, to protect public health at every stage of the food supply chain. Agriculture and environmental law focuses on the ecological footprint of food production and examines, among other things, the legal instruments used to reduce the impact of this footprint on public health. Aspiring lawyers and teachers can apply to the highly competitive S.J.D. program in Environmental Law. The SJD or Doctor of Law is a research-oriented degree program designed to guide new researchers through the process of writing and publishing a doctoral dissertation that creates original knowledge in a particular area of environmental law.
